Pork Fried Rice


Ingredients:
3-4 cups white rice(instant does not work well for this recipe)
2 cups diced, cooked pork tenderloin or other boneless pork (tastes best if
tenderloin is first marinated in teriyaki sauce before cooking)

Wok oil (found in Asian food section of grocery store) or sesame oil
½ onion, diced
Any vegetable of choice, diced
Crushed garlic (1-2 cloves)
Soy sauce (about 1/4-1/2 cup)
1-2 eggs, cooked, scrambled into small pieces (optional)
Diced green onion (optional)

Instructions:
1. Cook rice according to package direction and let it sit out, uncovered until the rice becomes dry.
2. Heat 1-2 tablespoons of oil in heated wok or frying pan. Add diced onion and cook several minutes until onion turns clear.
3. Add crushed garlic and stir, cooking about 1 minute longer. If you are using other vegetables, add them to the pan at this time. Cook and stir until vegetables are tender.
4. Add another 1-2 tablespoons oil to pan. Stir in diced pork at this time. Stir, cooking about 5-6 minutes longer.
5. Add cooked rice to the pan. Stir well, coating rice well with the oil in pan and blending the meat and vegetables well. Pour soy sauce over rice and stir until well blended. Add more soy sauce, if needed, to desired darkness/taste. Cook about 5-8 minutes longer, till rice is very hot and soy sauce is blended well.
6. Put rice on a serving platter and garnish with optional egg and green onion.

Note:
Fried rice seems to turn out best when using rice that is fluffy rather than sticky. Extra long grain rice works wonderfully. If you have a rice cooker, use it rather than cooking the rice on the stovetop.This recipe works well with any other kind of meat such as chicken, or shrimp.
