Green Rice

Ingredients:
2- Cups uncooked rice
2/3 Cup chopped green pepper
1/3 Cups minced parsley
1 Cup chopped green onions
1/2 Cup Vegetable oil
1 tsp. salt
4 Cups chicken broth
1 clove garlic
1/4 cup Parmesan cheese

Instructions:
1. Preheat oven to 350 degrees.
2. Combine all ingredients and place in a 2 qt. casserole dish.
3. Bake until liquid is absorbed for 45-60 minutes. Some times, it takes a little longer than then the time I stated

Note:
Best when using rice that is fluffy rather than sticky. Extra long grain rice works wonderfully. You may also try brown rice increase cooking time 10 min or until liquid is absorbed.
