Seafood Pasta Salad
Ingredients:
1 can tiny shrimp (or seafood to your liking)
1-cup larger shrimp (size is up to you)
½ tsp fresh basil
½ tsp fresh oregano
1tbsp chopped garlic
¼ tsp White pepper
2Tsp Pesto Seasoning (McCormick Gourmet Collection)
Olive Oil
1 tbsp butter (optional)
Small cucumber
2 ¼ oz can sliced black olives with jalapeno
1 cup yellow pepper
½ green pepper
½ cup Onion
1 16 oz box of Sea Schell (Tri-color) pasts or pasta of your choice
16oz bottle Creamy Caesar dressing
½ cup Mayonnaise
Instructions:
1. Heat to sizzle shrimp in fry pan adding olive oil and butter, basil, oregano and garlic. Cook approximately 5- 10 min depending on size of shrimp. Set aside and let cool.
2. Cook pasta till done (do not over cook). Pasta should be firm to touch not soggy. Strain and let cool in COLD water.
3. Chop up green pepper, yellow pepper, cucumber, and onion.
4. In small bowl, add Creamy Caesar dressing and mayo till well blended. Stir in pesto seasoning, white pepper, and blend.
5. Add chopped vegetables to cooled pasta.
6. Once blended well add dressing mix to pasta, make sure dressing mix covers all of pasta.
7. Add cooled shrimp mix and cool in refrigerator for at least an hour.
Note:
Great for left over Chicken as well.Enjoy!!
