Italian Fried Chicken
Ingredients:
1/3 cup grated Parmesan cheese
3 TBSP all- purpose flour
3/4 tsp dried basil, crushed
1/2 tsp salt
1/8 tsp ground nutmeg
dash pepper
1 21/2 to 3 pound broiler-fryer chicken, cut up
2 TBSP cooking oil
Instructions:
1. In paper or plastic bag combine all seasonings and flour.
2. Add chicken a few pieces at a time, and shake to coat evenly.
3.In 12 inch, skillet heat cooking oil. Place meaty chicken pieces toward the center and remaining pieces around the edge.
4.Cook, uncovered, over medium-low heat for 50 to 55 minutes or till chicken is tender, turning occasionally.
5. Drain on paper towel.
