Angel Wings
Ingredients:
3 whole chicken breasts, skinned and split
3 T butter or margarine
1 1/4 cup chicken broth
1 onion (chopped)
2 cans diced green chilies
1 clove garlic (minced)
1 T flour
1/2 cup cream
1/2 cup shredded cheddar cheese
3-˝ cups water
Instructions:
1. Preheat oven to 350 degrees
2. Brown chicken lightly in half the butter in a skillet seasoned with salt and pepper. Lay in a shallow baking dish (9x12) - do not layer.
3. Splash with 1/4 cup chicken broth. Cover tightly and bake in preheated oven for 20 minutes.
4. While chicken bakes, sauté onion in remaining butter until soft.
5. Add chilies to pan with garlic and flour. Stir and cook for a minute or so
6. Stir in the remaining cup of broth and simmer until smooth and slightly thickened
7.Pour into blender or food processor and whirl until pureed.
8. Put back into the skillet and stir in the cream.
9. Heat just until simmering and then pour over the chicken.
10. Sprinkle with cheese; bake in 350-degree oven an additional 30 minutes.
