Herbed Eye Roast
Ingredients:
1-small Eye Round beef roast
3 cloves fresh garlic
2 TBSP Chopped Oregano (I use Polaner)
1 tsp McCormick Garlic Powder
Salt to taste
1 ½ TBSP Cilantro leaves from the McCormick Gourmet Collection
1TBSP pesto Seasoning from the McCormick Gourmet Collection
2 TBSP Olive Oil
½ cup beef broth
Instructions:
1. Preheat oven to 325 degrees.
2.Cut hole in front, back and each side of the roast.
3. Cut garlic into halves and place inside holes.
4. Add one TBSP of oregano inside the holes with garlic.
5.In small bowl, mix 1 TBSP oregano, garlic powder, cilantro leaves and pesto seasoning with olive oil.
6. Rub all over roast and place in pan. Pour in beef broth and cover with Aluminum foil.
7.Cook for 2 to 2 ½ hours for meet to l be med rear in the middle.
