Banana Muffins
Ingredients:
1-¾ cups sifted cake flour
2 tsp baking powder
¾ tsp salt
¼ tsp baking soda
¼ cup Crisco shortening
1/3-cup sugar
1 egg
1 cup mashed bananas (equivalent to 2 to 3 bananas)
Instructions:
1. Preheat oven to 400 degrees
2. Mix and shift flour, baking powder, salt, and baking soda.
3. Beat shortening until creamy, gradually adding sugar and continue beating until light and fluffy.
4. Add egg and beat well.
5. Add flour mixture alternately with bananas and mix well until batter is smooth.
6. Fill well-greased muffin pans 2/3 full. Bake until done approximately 20 min for small and 30 for large.
Note:
Nuts maybe added
